Banana & protein powder pancakes (vegan, dairy free & gluten free options)


  • 1 banana
  • 1 scoop of vanilla protein powder – I use vegan for a dairy free effect but the whey kind is good too
  • 1 tsp baking powder
  • Vanilla extract
  • 1 egg OR 1 tbsp of flaxseed + 3 tbsp water
  • Butter or coconut oil (optional for cooking)


  • Mash the banana and mix in the other ingredients in a bowl
  • Cook in a non-stick pan. Butter or oil is optional, depending on your pans tendency to make stuff stick and taste preference

Tip: make sure the pancakes are super tiny because otherwise they won’t cook properly – I make mine about the diameter of my palm.

Option: enjoy with maple syrup
