- 4 cups of spinach
- 2/3 cup of Daiya mozzarella style shreds
- 2/3 cup of pesto
- 2 cans of tuna
- 227 g (dry) of quinoa pasta
Cook the noodles on the stove. While that happens, store the rest of theingredients together in a casserole dish. Also, heat the oven to 400 degrees F.
Stir in the noodles and cook for 15 minutes.
So all of this together would be really, really good as a cold salad. I tried some of it pre-noodles and it was so good. You could probably also let the noodles cool off before Ming them in for a pasta salad. So both ways are amazing.
Also, I used a dairy and nuts free pesto, but any pesto will do the job just fine.
